Hopefully someone can help me.

I watched Mr. Okawa's UnderWater Demo and noticed that he is playing with his low C starting at the 3rd C from the left using a 61 key keyboard. That means that he is able to use all 24 key switches on his heft had using a smaller keyboard, starting at C0.

Just wondering how he shifted everything up an octave or two?

I have a cheap 48 key (I believe) keyboard that lets you transpose with the push of a button. You can transpose by octave as well, so that's likely what he's done for the video.
